I have been experimenting with different recipes this year and have tried out about 20 (including my own) These are the ultimate best! I never use the wafers just add a few more chocolate chips. I sometimes skip on the Skor (well Daim cause I’m in Europe). I also don’t use wafers I use regular chocolate bars. I just don’t like really really dark chocolate. I use semisweet chocolate (around 45%-50% cocoa). This makes them get a crispier edge but also a softer middle at least according to many other recipe-creators.ģ. Halfway through the baking time I pan bang them. They’ll be a goey in the middle and just overall soft but they’ll harden as they cool off on the baking tray.Ģ. I bake them for 11 mins approximately or just until I start seeing them get a little brown on the edges. I bake at 175 degrees Celsius which is a bit lower than the 190 degrees of the recipe. This enables the cookies to get a deeper caramel like flavor, a better texture and just simple makes them go from good to AMAZING.Ģ. I let the dough rest for at least 12 hours in the fridge. I love was wonderful, though my cookies spread a ton and were very thin, not my ideal cookie.
